Recipe #1: Hawaiian Pork Tenderloin
With just the right balance of sweet, tangy, and umami flavors, this main dish hits all the right spots on the palette. Easy, kid-friendly, yet impressive!
Serve the sliced pork tenderloin on a bed of rice, couscous, or quinoa. Drizzle with the easy-to-make sauce and top with Pineapple Salsa or a store-bought fresh fruit salsa. Asian Slaw would go well as a side dish, too.
Mix It Up:
Use this marinade for pork chops or chicken breasts or thighs instead.
Recipe #2: Baked Cheesy Tortellini with Spinach
This oh-so-cheesy baked pasta is a great way to sneak in a little extra veggie. It’s easy to add in other ingredients (see ideas below), but we kept it pretty basic for quick assembly. Omit the pepperoni to make this vegetarian.
Top with grated Parmesan and serve with a side like these:
