Recipe #1: 4-Ingredient Pan-Fried Pork Chops
Dredge boneless chops in a simple savory seasoning blend. Then, sear on both sides and finish cooking them in a pan, creating a nice crust on the outside and locking the moisture inside.
This main dish goes well with sides like:
• Mashed Potatoes
• Steamed Green Beans or Roasted Brussels Sprouts
• Slow Cooker Cinnamon Apples or applesauce
Mix It Up:
Use the pan drippings at the end to create gravy to drizzle over the top. Basic recipe: Add 2 tablespoons each of butter and flour to the pan and whisk for about 1 minute over medium heat. Pour in 1 cup of chicken broth, turn heat up to medium high, and whisk until it’s smooth. Simmer and whisk until it’s the consistency of gravy, adding more broth as needed. Season with salt and pepper to taste.
Slice and warm up leftover chops. Serve on a toasted bun with BBQ sauce.
Recipe #2:Chicken Parmesan Casserole
The basic ingredients of classic Chicken Parmesan make up this delicious and comforting casserole. It’s a great way to use up leftover cooked chicken, too.
Serve warm either a la carte or over your favorite pasta with a green salad or oven-roasted broccoli.
Mix It Up:
For a healthier spin, serve over brown rice, quinoa, or spaghetti squash instead of pasta.
Add some chopped spinach to the chicken and sauce to sneak in some veggies.
Use leftover shredded turkey instead of chicken.
